What anime should I start watching if I havent watched an anime in a couple years?

Last thing I watched was Cowboy Bebop/Samurai Champloo/FLCL. I want to start watching stuff like this again. Suggestions?

I am not gonna give you a huge list, because these idiots think that people want a huge copy and paste off some website and not actual opinions. but these should be enough to get you started. in my opinion these are a few quintessential animes that must be watched. There are many more that you may like. Like some in the list above but its a waste of time to siphon out the trash in that list.
